Quick Pickled Red Onion

1c Vinegar (any will do)

1c Water

1T Sea Salt

1T Sugar

1 Large Red Onion, peeled and thinly sliced 

Fill a jar with the sliced onion.

Place the vinegar, water, salt, and sugar in a small pot. Turn on high heat and stir until the sugar and salt have melted into the brine.

Pour the hot brine into the onion-filled jar. Place in the refrigerator for at least 30 minutes to cool and meld. Once cool, cap the jar and store in the refrigerator up to one month.
