Browned Butter Sesame Krispies

1T Toasted Sesame Oil

3/4c Unsalted Butter

1/2c Black Sesame Seeds, toasted

24oz Marshmallows

1 1/2t Salt

12c Krispies Cereal

Toast the sesame seeds in a dry skillet over medium heat, stirring often with a wooden spoon. The sesame seeds are done toasting when you can smell them, about ten minutes.

Using a pastry brush, coat a straight-sided, 9x13-inch baking pan with a bit of sesame oil. Reserve the remaining sesame oil for the treats.

Melt the butter in a large, heavy-bottomed pot over medium heat. Once melted, keep the butter on the heat, stirring with a wooden spoon for about 5-8 minutes. The butter will begin turning golden brown and little brown specs will form. The butter will develop a rich, nutty fragrance. 

Reduce the heat to low and add the sesame seeds, marshmallows, and salt. Stir until the marshmallows have completely melted, about 5 minutes. Remove the pot from the heat and add the remaining sesame oil. 

Add the cereal to the marshmallow mixture and quickly stir until all ingredients are fully incorporated. Immediately dump and using the bottom of a measuring cup or a rubber spatula, press the krispies into the prepared pan.

Allow the Krispies to cool for at least 10 minutes before turning them out and cutting them into squares.

The Krispies will keep in an airtight container for up to 4 days on the counter or 7 days in the fridge. If stored in the fridge, allow them to warm to room temperature before enjoying.

There is no need to change up a good thing, but... If you wish to take them up a notch, this is the recipe. These Brown Butter, Sesame Krispies are not just sweet due to the rich, nutty flavor imparted by browning the butter. The sesame oil adds a velvetiness to the texture while the sesame seeds create a sophisticated visual element. Do check yourself in the mirror after sneaking a piece, as you will most likely have a black speck or two in your smile.

A quick note... This recipe makes an extra thick, final product. I think it's just fantastic. If you prefer a more manageable, wimpy treat, you can easily cut the recipe in half. But really, where is the joy in that? You only live once. Make the full batch!
