Spam Musubi

1 12oz. Can of Spam, cut into 8 horizontal slices (through round end)

1/4c Shoyu (Soy Sauce)

2T Mirin

1/4c White Sugar

4 Sheets Nori

4c Short-Grain White Rice, cooked and warm

2t Nori Komi Furikake

Musubi Mold

 

Place the shoyu, sugar, and mirin in a small bowl. Stir to combine.

 

Heat a skillet over medium-high heat. Fry the Spam slices until browned and crispy, 2-3 minutes per side. Turn off the heat and set the hot pan on a trivet.

 

Immediately, drizzle the sauce over the browned Spam while the slices are still in the pan. Flip the Spam with a fork to coat both sides. Set aside until ready to use.

 

Lay one strip of nori on a cutting board, shiny side up. Place the musubi mold across the middle, but perpendicular to the nori strip. Fill the mold with about 1/2 cup of rice. Do not press down on the rice. Leave it nice and fluffy. Sprinkle the rice with the furikake. Top with a slice of glazed Spam. Sprinkle another bit of furikake over the Spam and top with a second layer of 1/2 cup rice. Push down the stack firmly with your mold press. Slide the outside mold off the stack. Wrap the open end over the top and flip the musubi over so it rests sealed side down.

 

Serve immediately or roll snugly in plastic wrap and store in the fridge for a quick snack later. Will keep for 5 days. To reheat, place the wrapped musubi in the microwave for 30 seconds.
